2 ZUCCHINI THOKKU/CHUTNEY

Zuchini Thokku/Chutney

Zuchini or courgette is a summer squash. The zucchini can be yellow, green or light green, and generally has a similar shape to a ridged cucumber, though a few cultivars are available that produce round or bottle-shaped fruit. In a culinary context, zucchini is treated as a vegetable, which means it is usually cooked and presented as a savory dish or accompaniment.

Recipe from my sister Vimala, who tries out many chutney's with vegetables cabbage chutney, capsicum chutney, radish chutney, ridgegourd and ridgegourd skin chutney,
She tried this thokku with zucchini which tasted good with rice as well as chapathi/rotis.

Zucchini - 4 small
Garlic - 6 - 7 flakes
Onion - 1 medium chopped into big pieces
Green chillies - 5 - 6
Tamaraind - one small lemon size
Cumin seeds - 1 tsp
Urad dhal - 2 tbsp
Methi/fenugreek seeds - 1/8 th tsp ( or by count around 7 - 8)
Salt as needed
Oil - 1 tbsp

For tempering
Mustard seeds, urad dhal and curry leaves - few
Oil - 1 tsp

Peel and chop zucchini into thick pieces..
Heat oil in a kadai/pan and add urad dhal, cumin seeds...saute for few seconds and add methi seeds...can remove and keep it aside.

The below photo is sent by my sis using zucchini without peeling the skin, same method and recipe.

In the same kadai add chopped onions, fry for 2 - 3 minutes..next add garlic, green chillies, and tamaraind... fry till onions are light brown... next add zucchini and fry till they are soft and cooked... remove and cool. Next add both these( urad dhal... and onion mix) and grind in a mixer/blender with salt to a paste( can be fine or coarse).
Temper it with mustard seeds, urad dhal and curry leaves.
