CHILLI BHAJJI DOUBLE TOAST....this is one of the special from Bangalore street food ... the vendor used to prepare this on special orders ... this is made after making regular chilli bhajji...it really tastes good.

Long green chillies - 3 or 4
Besan/gram flour - 3/4 cup
Rice flour - 2 tbsp
Chilli powder - 1/2 tbsp

Salt as needed

Oil for frying

To brush in: Mix in some salt(1/2 tsp), chilli powder( 1/2 tsp) and lime juice( few drops).

Cut chillies first into one half from top and then cut into small 2 inches pieces .... make a batter with besan, rice flour, salt and chilli powder ... add water just enough to mix into dropping consistency .... add the chilli pieces and drop them in small batches in hot oil and deep fry .... remove and keep aside ... repeat for all the remaining ... once cool ... just make a slit in the centre ... so it just opens up half or 3/4th... just apply/brush in the mix of salt, chilli powder and lime juice ... do this for all the bhajjis ... drop them again in oil in medium flame and wait till it lightly changes colour ... the cut part will turn dark brown ... remove and enjoy your double toast ... usually this will be light crispy and very tasty ... You can always prepare the bhajjis ahead and toast them again( after brushing) just before serving. Just in case if you do not want to drop the whole bunch in oil and worry about the masala all getting in the oil, then you can as wel shallow fry them seperately.
