Recipe from my friend Athi...who prepared this dish , just for kids... they all loved it. Not only the kids, but others too enjoyed this dish, was very tasty, cheesy n yummy.
Pasta - 2 cups( can use any variety or shape)
Mixed frozen vegetables - 1 cup
Onion - 1 medium chopped fine
Tomato - 2 or 3 OR
Tomato sauce - 3 tbsp
Cheese - 2 or 3 tbsp grated ( can use any variety like monterary jack n cheddar, mozarella)
Salt as needed
Ginger garlic paste - 1/2 tbsp
Mushroom soup can - 1
Mint and cilantro leaves - few
Olive oil - 1 tbsp
Cook pasta in boiling water till they are fork tender... drain and keep aside... microwave frozen vegetables for 4 - 5 minutes.
Heat olive oil in a pan and add onions ...fry till light brown...next add ginger garlic paste and saute for a minute... next add chopped tomatoes or tomato sauce/ketchup and cook till they mashed and pulpy for about 8 - 10 minutes... next add cooked vegetables and stir well... pour in a can of mushroom soup...add salt, mint leaves and few chopped cilantro leaves...cook well till it comes to a boil ...next add cooked pasta and mix well. Remove and transfer to a microwavable bowl...top it with grated cheese....keep it in the microwave for few minutes , till the cheese melts.
