Carrot Uttappam /Uthappam / Ootappam/Mini Dosai

Carrot Uttappam...Uttappam's can be made with vegetables mixing in the batter or topping it with the vegetables after spreading into as small dosas...
This recipe of mine is with mixing vegetables in batter and spreading as small dosa which are Uttappams.

Batter( dosa/idli batter ) - 3 cups
Onion - 1 small chopped fine
Carrot - 2
Green chillies - 2 chopped fine
Channa dhal - 1 tbsp
Mustard seeds - few
Urad dhal - few
Curry leaves - few
Salt as needed

Heat 1 tbsp of oil in a pan and add channa dhal, mustard seeds, urad dhal and curry leaves....wait till it starts to splutter and add chopped onions and chopped green chillies...fry till onions are transparent.... then add peeled and grated carrot...fry well for 4- 5 minutes by also adding salt... remove and mix with the batter...you can also add little water, if the batter is too thick and cannot be spread easily.

Heat a tawa/griddle and take a ladle full of batter and spread into small and thick dosas... spray some oil on top...wait for a minute and turn to cook other side...serve with any chutney and or sambar.
