Basmati or any sona masoori - 1 cup
Carrot - 2 or 3 small
Onion - 1 medium chopped into thin slices
Green chillies - 2 slit long
Chilli powder - 1/2 tsp
Jeera/cumin seeds - 1/2 tsp
Cardamom - 2
Clove - 2
Salt as needed
Oil - 2 tbsp
Can also garnish with fried cashew and chopped cilantro
Wash and soak basmati rice for 15 minutes...then cook seperately with 2 cups of water...cool and keep aside.
Grate carrot in a grater.keep aside.
Heat oil in a pan and add Cumin seeds/jeera, cardamom and cloves(can also add mustard seeds, urad dhal and curry leaves)...when they splutter up add green chillies and onions and fry till onions are light brown. Then add grated carrot ...reduce flame and fry till carrots are soft and the raw smell leaves. Next add salt, chilli powder and mix well. Finally add the cooked rice and mix gently...(if needed can also add few sprinkles of pepper powder- optional).
