Capsicum / Colorful Bell Pepper Rice
Basmati rice - 2 cups
Onion - 1 big chopped into thin long slice
Capsicum - 2 chopped big or thin long slices
( can use mixed colours like green, red, orange and yellow)
Ginger garlic paste - 2 tbsp
Chilli powder - 1/2 tbsp
Dhaniya powder - 1/2 tbsp
Spices - Jeera, cardamom, clove, cinnamon, fennel seeds, ani star( all of these spices - very few of each)
Salt as needed
Oil - 2 tbsp
Wash and soak rice for 15 minutes...cook seperately with 4 cups of water and little salt...keep it aside and let it cool.
Heat oil in a kadai and add all the spices...next add onions and fry till golden brown...then add ginger garlic paste and saute for a minute...now add capsicum and fry till they are cooked well...it should be soft but yet firm...finally add chilli powder , dhaniya powder and salt...mix and add the cooked rice...mix gently and if needed garnish with chopped cilantro and or fried cashew.
