Badam( Almond) Kheer / Payasam
This is my 100th blog post and that too on a New year's day, so thought of something sweet and so here I am with Badam Kheer.
Milk - 5 cups
Sugar - 1/4 cup ( according to sweetness)
Blanched almonds - handful
MTR Badam feast powder - 2 tbsp
Cardamom powder - little
saffron - very little
Cashewnut and raisin - little
Ghee - 1 tbsp
In a thick vessel boil milk...before it starts to bubble up...reduce flame and boil it till the volume reducues to 3/4th , stirring now and then. In the meantime powder the blanched almonds in a mixer( if using almonds with skin, then soak them in hot water and squeeze out), if it powders very fine then add it to the milk or if it is still coarse then add little water and make a smooth paste, add this paste to the milk...cook for 5 mts...Now add sugar, saffron and MTR badam feast powder...cook stirring now and then...switch of flame and add cardamom powder.
Heat ghee.. fry cashew and raisins and add to the kheer.
Serve hot or chill ..both tastes great.
If you have peni ...then pour the kheer on top of it and enjoy your milk peni right at home...you can also pour over plain milk mixed with sugar.
