Vegetable Fried Rice/ Chinese Style Fried Rice
Basmati Rice or Long Grain Rice - 2 cups
Onion - 1 small
Capsicum - 1 ( can use mixed colours)
Carrot - 1
Cabbage - 1/4
Baby corn - few
Ginger Garlic paste - 1 tbsp
Soya sauce -2 - 3 tbsp
Green onions and/or cilantro chopped - 1/3 cup
Pepper powder - few sprinkles
Salt as needed
Oil - 2 tbsp
Ajjina motto - a pinch
Wash and soak rice for 15 minutes... Cook seperately with enough water( 2 :1 ratio) ..cool and keep it aside...
Cut onions and all other vegetables very thin length wise.
Heat oil in a kadai/frying pan and add onions fry till light brown.. next add ginger garlic paste and saute for a minute... then add all the vegetables one by one and fry well ... also add ajjinamotto(optional) and cook till they are soft but firm ... no need to over fry as this will become soggy... next green onions or cilantro and saute...then add soya sauce, pepper powder and mix well. Reduce flame and add the cooked and cooled rice with salt and mix well gently.
If needed can also add chilli sauce or garlic red chilli sauce along with soya sauce for extra flavor.
