A very simple a flavorful rice that can be made very easily. Can be had with just chips and or raita or any spicy curry/fry/sabji like potato.
Basmati rice - 2 cups
Onion - 1 big chopped
Tomato - 5 or 6 medium
Green chillies -2 slit
Ginger garlic paste - 1 tbsp
Mint leaves - few
Chilli powder - 1 - 1 1/2 Tbsp( or sambar powder)
Cilantro - few chopped
Salt as needed
Oil - 2 tbsp
Spices :- Jeera,Bay leaf, cardamom,clove and cinnamon
Cut tomatoes into big cubes and grind tomatoes to paste in a mixer. No need to add any water. Keep aside. If possible can also blanch, remove their skin and grind( if time permits).
Wash and soak rice for 15 mts.
In a pan heat oil and add all the spices + onions...fry till brown and then add ginger garlic paste, mint leaves and slit green chillies.Fry for a minute and add the tomato paste( u can also add tomato chopped)...fry till tomatoes are cooked very well and water leaves out. Add chilli powder ...if cooking in a pressure pan add rice, water and salt and cook directly for one whistle...if cooking in a rice cooker then add rice and this masala with salt and water...switch on rice cooker.
