Spinach sambar also called as Mangalore style sambar in my house was first started by my sister Vimala ... we all loved having it. It tasted great with rice.

Toor Dhal - 1 cup
Potato - 1 chopped fine
Spinach - 1 bunch chopped fine
Tamarind pulp - 1 cup
Coconut paste - 1 cup

To powder:-
Dhaniya/coriander seeds - 2 tbsp
Jeera/cumin seeds - 1 tbsp
Urad Dhal - 1 tbsp
Toor dhal - 2 tbsp
Channa Dhal - 2 tbsp
Red Chillies -6 - 8
Methi/fenugreek seeds - 1 tbsp

For Tempering:-
Mustard seeds, urad dhal, ingu, curry leaves

Fry all of the above powdering ingredients in a tsp of oil(by adding one by one) till light brown.. remove , cool and powder finely in a blender/mixer.

In a vessel add the potato and cook for 5 minutes, next add spinach and cook till both are cooked .. .Next add tamarind pulp, cooked toor dhal, also add the powder and cover to cook for another 10 minutes. Finally add the coconut paste and cook for another 4 - 5 minutes. Season it with mustard seeds, urad dhal, ingu and curry leaves.Variation can also fry some chopped onions(shallots) and add to the sambar.
