Mixed vegetable poriyal/porial/dry curry/koora/sabji
This curry goes well with rice as a side dish and also with any type of chapathis/parathas/rotis. Can add any type of veggies but try to avoid the ones that get soggy or even if you add them then add it in the end or you can also saute it seperately add to the same dish.
Onions -1 medium chopped fine
Capsicum - 1 chopped fine
Beans - 1/2 cup Chopped fine
Carrot - 2 chopped fine
Potato - 1 chopped fine
Peas - little
Chilli Powder - 1 tbsp
Dhaniya/coriander powder - 3/4 tbsp
Jeera/cumin powder - 1/2 tbsp
Mustard seeds, urad dhal - little
Salt as needed
Oil - 1 tbsp
Take beans,carrot,peas and potatoes in a microwavable bowl...just sprinkle little water and set it to cook for 8 - 10 mts. Keep it aside.
In a kadai/frying pan heat oil and add mustard seeds, urad dhal. Wait for few seconds and add chopped onions and fry till light brown next add just the capsicum and fry till they are cooked( but they still have to be firm). Add the cooked remaining veggie( beans..carrot...) and mix...add salt and the powders and mix well together for anpther 2 - 3 minutes. Garnish with some chopped cilantro.
You can add any other type of veggies like cauliflower.
