Egg/Muttai Omelette Curry/gravy/kuzhambu/kulamby/koora

Egg - 3 or 4
Onion - 2 medium chopped fine
Tomato - 2 medium chopped fine
Chilli powder - 1 tbsp
Dhaniya/coriander powder - 1 tbsp
Jeera/cumin powder - 1/2 tbsp
Pepper powder - few sprinkles
Coconut milk - 1 cup
(optional only for thickness and gravy(qty))
Salt as needed
Oil - 4 tbsp

Mustard seeds, urad dhal, curry leaves.

Can use shallots( chopped slightly) instead of onions.

In a kadai/pan heat 1 tbsp oil and fry half a onion till transparent... remove and put in a mixing bowl... break and add eggs + salt + pepper powder and beat well and in a tawa pour and make 2 or 3 omelettes... remove and keep aside....later cut them into small pieces( around 1 inch).

In the same kadai/pan heat 2 tbsp oil and fry the remaining chopped onions till brown... add tomatoes and fry and cook till they are mashed very well... next add all the powders( can substitute with homemade special powder for curries)...and saute ... next add coconut milk along with a cup of water .. if not using coconut milk add water and cook on low flame...just before removing add the omelette pieces and salt... Temper with all the seasonings ingredients ..it tastes really good when the flavor is absorbed in the omelette by the gravy..goes well with any types of rice variety or plain rice.
