Avarakkai/ field beans or broad beans/ chikkudukaya Kura
Avarakkai - 1 pack( if fresh chopped 2 1/2 cups( VAL PAPDI)
Onion - 1 medium chopped fine
Chilli powder - 1 tsp
Jeera/cumin powder - 1/2 tsp
Grated Coconut - 1 tbsp
Mustard seeds - very little
Urad dhal - very little
Curry leaves - few springs
Salt as needed
Oil - 2 tbsp
( Can also sunstitute the powders with few broken red chillies or can use half powders and half of broken red chillies)
In a kadai heat oil and add mustard seeds + Urad dhal + curry leaves...when they splutter add onions and fry till light brown...now add the vegetable and fry well...stirring in between...when once cooked add the powders and salt...add grated coconut and mix well.( I did this method for the frozen pack).
If using fresh then add water just enough for immersing and cook till soft. If you have excess water then drain and add in any gravies or soup and follow the same procedure.
