4 CARROT HALWA

Carrot Halwa/ Gajar Ka Halwa/ Carrot Pudding


This is my 200th blog post, so I wanted to post something sweet and decided carrot halwa. Somehow it has been pending from a long time.
Carrot halwa/halva also famously called in hindi as gajar ka halwa is one of my hubby's favourite sweet. This sweet is the only sweet that I could make or tried before marriage and also the first one that I tried it on my husband after marriage. He liked it so much, that I started to make it often almost like every Friday evenings, until I got bored of it and learnt many more. But he never got bored to eat this and loved everytime I prepared them.


Peel and grate the carrots in a grater with thicker holes ...if you grate with a small hole, it will get mushy very soon. But , it all depends on the texture that one likes apart from taste...so just grate the way you want.

Grated carrot - 4 cups
Milk - 2 cups
Sugar - 1/2- 3/4 cup( check for sweetness and add if required later)
Ghee - 5 tbsp
Cardamom powder - 1/4 tsp
Cashew pieces - 10( can add more)
Raisins - 10 ( can add more).


Heat 2 tbsp of ghee in a kadai/pan and fry cashew and raisins... when they turn light brown ... remove them and keep aside. In the same kadai/pan with ghee add grated carrots and fry well ( stirring often)...reduce flame and let it to cook for few minutes ( around 8 - 10 minutes) ....then add milk and allow it to cook together till the carrots are soft and the milk is all drained out/reduced ...add sugar( add sugar more or less depending upon the sweetness required) and cook till the halwa is thickened..add remaining ghee and mix and stir well ... next add cardamom powder and the fried cashew and raisins. The cooking process will take time, but the result is good. If you want to make this sweet in a hurry, then you can cook the carrots with milk in a pressure pan and reduce the cooking time. I have tried this method also many times :D.
Place the grated carrot along with milk in a pressure pan and cook for 3 - 4 whistles...then add it to the kadai and follow the remaining procedure.

0 RIDGEGOURD MASALA


Ridgegourd masala is a dish invented/started by my mom. Due to her health condition, she started to avoid many vegetables that included potato the most. She wanted to try something different just like potato masala, but instead she used ridgegourd. The result was superb and since then we have been making it regularly . This dish goes well with chapathis. Few days back I served this masala with chapathis to a friend who came on a casual visit, they could not believe that it is a ridgegourd dish, as they were not a favourite of this vegetable. They asked me the recipe and said if ridgegourd is cooked this way, they sure are going to have it.

Ridgegourd - 2 or 3 cups chopped
Onion - 1 small chopped
Garlic - 4 pods crushed
Green chillies - 4 slit long
Jeera/cumin seeds - 1/2 tsp
Salt as needed
Oil - 1 tbsp

Peel the skin of ridgegourd( can save them for thovayal/chutney) and cut into thick pieces. Add 1/4 cup of water and cook till soft. Can also keep in the micorwave for 8 - 10 minutes...remove and cool.
Heat oil in a kadai/pan and add jeera...when they start to splutter up add crushed garlic,slit green chillies and chopped onions, fry till onions are light brown/ tranparent....next add ridgegourd paste( grind the above cooked vegetable to a smooth paste..can do it while frying onions..side by side)....add salt and cook till it comes to a boil remove and serve with chapathis/parathas.

3 METHI RICE

Methi Rice / Vendhaya Keerai Sadham / Fenugreek Leaves Rice


I like methi leaves a lot, whenever I buy them I try to get extra bunches so I can prepare many dishes with it. Today I wanted to make methi palav, but ended up making methi rice, one of my favourite.

Basmati rice - 2 cups
Methi leaves - 2 cups
Onion - 1 medium chopped fine
Tomato - 2 small chopped fine
Ginger garlic paste - 1 tbsp
Green chillies - 2 slit long
Chilli /sambar powder - 3/4 tsp
Jeera/cumin seeds - 3/4 tsp
Salt as needed
Oil - 2 tbsp
 


 

Wash and soak rice for 15 minutes..later cook in a rice cooker with little salt adding 3 1/2 cups to 4 cups of water...when done, remove and let it cool.

Clean and remove the leaves from methi bunch, wash and pat dry. Do not chop before hand as they will turn out bitter. Just chop the leaves coarsely few mts before you add in your cooking.


Heat oil in a kadai/pan and add jeera/cumin seeds...when they start to splutter up add onions and fry till light brown...next add ginger garlic paste and saute for a minute....then add chopped tomatoes and mash to cook well...fry well till they are mashed, pulpy and then all the water out of it leaves or completely dries out....then add chopped methi leaves( you can chop it fine or coarsely)...and fry till the leaves are cooked...next add salt and chilli /sambar powder and mix well...finally add cooked rice and mix gently.
